Position is responsible for the preparation of food in accordance with federal and state standards and regulations in the assisted living facility. Maintains high standards of sanitation in food handling and work area. Supervises and coordinates activities of kitchen staff.
%u2022 Prepares food in accordance to the posted menu utilizing standardized recipes that maintain the nutritional value of foods.
%u2022 Assists in the requisitioning of food and supplies. Will assist and delegate as needed in the receiving and storage of all dietary supplies following proper storage guidelines and practices. This includes proper labeling, dating, rotating, separating (i.e. chemicals- PHF & RTE foods) and other practices learned as a QFO.
%u2022 Serves all foods adhering to the portion sizes listed and following proper food handling techniques.
%u2022 Maintains accurate records of both food temperatures and refrigeration temperature.
%u2022 Assists in the care and maintenance of equipment and instructs other in doing so also.
%u2022 Keeps working areas and equipment clean and sanitary.
%u2022 Supervises Dietary Aides assigned to his / her shift.
%u2022 Serves meals to residents following the posted schedule on a timely basis following the various therapeutic diets, and resident menus.
%u2022 Develops and maintains a good working relationship with other department employees.
